This easy to make, fairly quick meal, given the number of dishes, contains all the flavors and textures of an American Holiday!

PAN-FRY GARDEIN CHICKEN NUGGETS

Warning. You may want to use 2 packages, as the temptation to keep nibbling after these nuggets are cooked is strong. Very strong.

AFC BROWN MUSHROOM GRAVY

We’re making a brown mushroom gravy using the Parsley Diet Soup as a base. With the addition of a few ingredients a savory gravy is achieved, while still keeping down the fat content. Traditionally gravy was made from the fat drippings with a little water and thickener added. Today we don’t use the animal and we don’t want the gravy to be predominantly fat.

Makes about 5 cups

CAROTENE INSTANT MASHED POTATOES

They look like super fluffy sweet potatoes, but when you don’t have the time, and you want a nutrient boost, add carrot juice in place of the milk the recipe calls for on the package. Instant never tasted so good! You just may make this a habit!

Use wherever you use regular mashed potatoes!

PAN-FRY CARAWAY CABBAGE

Super simple pan-fried cabbage, requiring only a little oil, caraway seed and salt and pepper. How easy is that? The surprise is the flavor achieved, when simply caramelizing green cabbage without a lot of extraneous ingredients that distract from its natural flavor essence!

Serves 4

CALYPSO PEAS

A beautiful expression of fat-free – velvety, light, impressive simplicity, gently coating the peas as you lift them from the sauce. Or hey, why not take some sauce along? Two spoons for service – one slotted, one not!

This calypso is a slow dance – enjoy the moves!

CRANBERRY CIDER PUDDING SAUCE

Those cranberry skins can get in the way of enjoying the cranberries. So what do we do? Make a pudding-like sauce that smooths the edges making the entire cranberry experience one to savor. Cilantro – in ground seed form and fresh leaves – now becomes something to talk about. You could call it the Halfway Cranberry Sauce – both jellied and whole in the same elegant sauce!

Makes 3-1/4 cups

Make your cranberry sauce and gravy ahead, then savor the day! Or, use canned cranberries and jarred gravy to make it even easier. Keep it animal-free!!
