




Lilly’s Mac Tofu & But Chicken Dish -low fat
When you happen upon a free box of MAC AND CHEESE don’t throw the whole thing away, save the mac and throw away the cheese packet. In public housing and senior residences, outsiders come in and throw food about in spots, like they’re feeding pigeons, come and get it. Normally I decline, but why not use the pasta and throw away the cheese, since I don’t eat animal products. This is a dish I made for Lilly Belle and Me. The flavors are reminiscent of chicken and dumplings – only animal-free using macaroni in place of dumplings!
Makes 16 cups
TOFU VEG MAC:
2, 14 oz. pkgs. vacuum packed hard tofu, firm, rinsed and cut into 1/4-1/2 inch cubes
8 c. water
2 t. salt
2 T. Spice Time Imitation Chicken Bouillon
1 t. turmeric
fresh grind black pepper, lots
7.25 oz. box PASTA USA MACARONI & CHEESE DINNER – I threw away the packet of cheese and used only the macaroni
2, 10 oz. steam bags froz. mixed vegetables by Bird’s eye
1- Place tofu, water, salt, bouillon, turmeric, pepper in large saucepan. Boil, reduce heat, cook 20 minutes.
2- Add veggies, cook 5 minutes longer.
3- Add plus macaroni from box. Stir, return to boil, cook till pasta is tender; it won’t take long – a few minutes.
4- Remove from heat, cover and let set till ready to eat – not too long.
BUTLER SOY CURLS
4 c. water
1 T. Spice Time Imitation Chicken Bouillon
2 t. salt
fresh grind black pepper, lots
1 t. turmeric
1/2 t. ground allspice
8 oz. bag Butler Soy Curls
1- In separate saucepan combine water, bouillon, salt, pepper, turmeric, allspice.
2- Bring to boil, add soy curls, stir well, return to boil, partially cover, reduce heat to low and cook 20 minutes. Remove from heat.
Assembly:
1- When ready to eat, combine tofu/veg/mac pot with cooked soy curls, keeping all the liquid.
2- Reheat, adjust seasoning and eat.
Notes: When I was a kid and visited my Nanny Kay in New Hampshire I loved Kraft Macaroni and Cheese in a box. I thought man-o-man this is something else; macaroni and cheese in a box!!
It was easy and cheap seeings though Nanny worked in a factory sweat shop sewing shoes and was too tired to cook from scratch when she got home.
I loved Kraft Macaroni and Cheese in a box. I’d like not to have to throw the cheese pack away.
