Peach And Roasted Pepper Dressing

PEACH AND ROASTED PEPPER DRESSING

A light, creamy, cheezy tasting dressing with no added fat or sugars. Looks like creamy French! Serve cold over traditional salads, or heated over pan-fried veggie meats or side dish vegetables!

Makes 6 cups

15 oz. can sliced peaches in 100% juice

12 oz. jar sweet red roasted peppers, including liquid from jar

12.3 oz. SILKEN extra firm tofu, rinsed

1/2 c. light vinegar

1/2 t. xanthan gum powder

1 t. guar gum powder

1 t. granulated malic acid

1 T. vegan yeast (nutritional yeast)

fresh grind black pepper to taste


1- Combine peaches, peppers, tofu and vinegar in blender container and blend till well- mixed.

2- Add xanthan gum and guar gum and pulse till mixed, then blend till smooth.

3- Add remaining ingredients and blend till smooth, again.

4- Let set 15 minutes to thicken dressing, then blend again till smooth.

5- Pack in covered containers and refrigerate till ready to use.
