Pumpkin TATOR Mash fat-free

PUMPKIN TATER MASH FAT-FREE

You get the fatty mouthfeel without the fat! Pumpkin and potatoes – perfect match! Serve with gravy! Nutritious, delicious and easy to make! Refrigerates and reheats well if you want to make them in advance.

Makes 3 cups

15 oz. can plain pumpkin (puree), heated on stove till hot throughout

2 c. boiling water

1/2 c. instant potato powder

1 T. light brown sugar

1 t. salt

fresh grind black pepper to taste


In large bowl place boiling water.

Add instant potato powder, whisking till as thick as it’s going to get.

Add heated pumpkin, whisking to totally incorporate into the potato mash.

Add sugar, salt and pepper, whisking till dissolved and evenly dispersed.

Notes: I didn’t add any usual holiday spices, wanting the pumpkin to flavor as pumpkin. This time. Next time maybe not. Add spices if you like (pumpkin pie spice or any of the individual spices contained in it).

If using potato flakes or buds, add a little at a time to the boiling water, while whisking till fluffy.
