GREEN APPLE CUCUMBER SALAD – low fat
Sliced green apple, sliced seed cucumber, onion, tarragon and fresh lemon tossed with a low fat brown sugar curry-cinnamon yogurt dressing. Yikes. Smooth and buttery tasting!
Serves 6
Salad:
1 lg. garden variety cucumber, peel, seed, cut ends off, cut in half from end to end, slice into 1/4 wide arcs
1 lg. green apple, cut into quarters, core each segment, then thinly slice each segment – leave skins on
• the thinner the better for the apple
1 sm. yellow onion, cut off ends, cut in half from end to end, then very thinly slice into half rings
zest and juice of 1 lg. ripe lemon – zest, cut in half, squeeze, strain (1/4 c. juice)
1 t. dried tarragon
In large bowl combine all salad ingredients. Toss well to coat thoroughly all apple slices with lemon juice.
Dressing:
1 c. plain dairy-free yogurt – I used Forager brand
2 T. Balsamic vinegar
1 T. granulated sugar
2 T. brown sugar
1 t. cinnamon
1 t. mild curry powder
1 t. garlic powder
1/8 t. celery seed
1 t. salt
fresh grind black pepper to taste
Combine all dressing ingredients in bowl and whisk till smooth. Adjust seasoning and set aside.
Assemble:
Pour dressing over salad ingredients, toss to coat well, cover and refrigerate till ready to serve. Or, transform to serving bowl and serve immediately.
Serve as a condiment salad or in a lettuce cup as a side salad.
Best served the day it’s made.
