Fat-Free Sugar-Free Watermelon Dressing

I just made this and love the light creaminess. I’m back into salads now for the raw factor. I want to eat something substantially raw every day – I picked salad. But I like creamy dressing and most are high in calories and fat, considering how much I like on the salad. One to two tablespoons is not enough for a large saladnot for me. So ditch the fat and go for the creamy!

Makes approx. 20 ounces

approx. 3 c. cubed fresh watermelon, no larger than 1/2 inch cubes, otherwise the measure will be off (little pieces)

2 t. guar gum

1/4 c. apple cider vinegar, the cheap kind

1 t. dry mustard

salt to taste

fresh grind black pepper to taste


1- Place watermelon in blender and blend till smooth and frothy.

2- Add guar gum and blend again till smooth.

3- Add vinegar, mustard, salt and pepper, and blend again till smooth.

4- Wait about 15 minutes, then return and blend again. You’ll notice more thickening at this ‘after the wait‘ point.

5- Store in covered jar in refrigerator. Serve over lettuce or fruit salads. Stir, shake or re-blend before sing for the first time.
