Before Baking After Baked Tender Insides
TASTY TOFU TOPPERS
Tasty Tofu Toppers are most often used to top salads that require a soft component that is low fat. It takes the place of cheese, egg or avocado. Tasty Tofu Toppers get my vote every time! Also use in wraps in place of animal cheese and animal meats! How about as a healthy snack? Yes to that too!
Makes about 4 cups
Preheat oven to 400 degrees
Seasoning:
1-1/2 t. salt
2 t. smoked paprika
2 t. garlic powder
2 t. onion powder
1 t. dry mustard
1/4 t. dried thyme, crushed between fingers
2 T. vegan yeast aka nutritional yeast
fresh grind black pepper as desired
Tofu:
2, 12 oz. pkgs. firm water packed tofu, rinsed and wrapped in towel, gently pressed with hands, then let set for about 5 minutes, then cut into 1/2-3/4 inch cubes (handle carefully)
1- In extra-large bowl place all seasonings. Stir to evenly distribute all ingredients.
2- Place tofu cubes gently in bowl, then toss the bowl with a short flipping action of the wrists. It’s best to use both hands for better performance.
3- Turn onto lightly greased or parchment papered baking sheet. Using hands, separate cubes equidistant and not touching.
4- Bake in preheated 400 degree oven for 30-45 minutes.
5- Remove from oven and cool on sheet before lifting gently to covered container. Refrigerate till ready to use.
Notes: The vegan yeast adds a rich complexity to both flavor and texture achievements.
