Delight Soy Chicken And Green Bean Salad

Most of us wouldn’t think of putting fresh green beans in a chicken salad, but it works. PLANT CHICKEN OF COURSE! High fiber and a nice crunch with tiny cuts. Give it a try, see what you think! We reduce the fat by using Poupon Dijon mustard in addition to the veg mayo!

Makes about 3 cups

1/2 lb. Delight Soy Chicken Nuggets, diced (found in Whole Foods stores)

1/2 sm. onion, diced

1 lg. handful fresh string beans, tips removed, cut into segments


1/2 lg. garden variety cucumber, peeled, seeded and diced, 1/4-3/8 inch cubes


salt

fresh grind black pepper

celery seed

onion powder

2 T. Poupon Dijon mustard


veg mayo to taste


Place soy chicken, onion and string beans in food processor. Pulse till evenly chopped but not mush.

Transfer to mixing bowl.

Add cucumber, salt, black pepper, celery seed and onion powder to taste.

Stir well to evenly disperse.

Add Poupon Dijon mustard. Stir to coat all ingredients.

Now add only as much veg mayo to bind the salad. It won’t require much.

Serve on lettuce leaves or sandwich.
