LEMON CARAWAY COLESLAW – fat-free
What’s the next best thing to mayo? Lemon pie filling! Yes, it works. Add a little vinegar, salt and pepper, herbs and/or spice and you can still enjoy your favorite salads with a creamy fat-free coating!
Makes 6 loosely packed cups
LEMON CARAWAY MAYO:
1/2 c. lemon pie filling – I used LUCKY LEAF brand
1/4 c. white vinegar
1/2 t. onion powder
1/2 t. fine grind caraway seed
1/4 t. celery seed
1/2 t. salt
fresh grind black pepper to taste
In small mixing bowl combine all mayo ingredients. Stir with fork till velvety smooth. Set aside.
1 lb. or about 7 c. sliced inner core Napa cabbage – stack inner leaves and cut crosswise into 1/4 inch wide strips, or place entire inner core on side and slice from top to bottom into thin slices – discard end piece. Use outer leaves of cabbage for another purpose
1/3 c. sliced scallion, green and white part
1/2 c. fresh sweet red pepper, diced into 3/8 inch squares
ASSEMBLY:
In large bowl place cabbage, scallion and red pepper. Toss to evenly distribute.
Pour all of lemon caraway mayo over veggies. Toss to evenly coat all ingredients.
Transfer to covered container and refrigerate till ready to serve.
Serve LEMON CARAWAY COLESLAW as a side dish or top a burger or a baked bean sandwich or a hot dog.
