Carotene Instant Mashed Potatoes

CAROTENE INSTANT MASHED POTATOES

They look like super fluffy sweet potatoes, but when you don’t have the time, and you want a nutrient boost, add carrot juice in place of the milk the recipe calls for on the package. Instant never tasted so good! You just may make this a habit!

Use wherever you use regular mashed potatoes!

We made 4 servings

1 c. vegetable broth – I used IMAGINE VEGAN BROTH

1 c. carrot juice

3 T. margarine

1/2 t. salt

fresh grind black pepper to taste

1-1/3 c. Idahoan Instant Mashed Potatoes

apple cider for thinning purposes


In small saucepan, over medium heat, place vegetable broth, carrot juice, margarine, salt and pepper.

Bring to boil, being careful not to let it overflow the pan.

Transfer the boiling liquids to a mixing bowl.

Pour the instant flakes in all at once. Immediately stir with fork to moisten all surfaces. Then stir with spoon to gauge the thickness to see if it needs more liquid.

If it does need a little thinning, use apple cider, 1 tablespoon at a time, to add a slightly sweet and zesty component.

Transfer to serving dish and serve.
