ORANGE SAFFRON GINGER BEER DRESSING
Orange, and carrot juices, banana and ginger beer blended with saffron threads, coriander and garlic creating a sweet, savory, tart fat-free salad dressing!
Makes 4 cups
12 oz. bottle ginger beer – I used Goya brand this time
1 lg. ripe banana
2-4 peeled garlic cloves or as you like
1 c. fresh squeezed orange juice
1/2 c. carrot juice
1/4 c. apple cider vinegar
2 t. guar gum powder
1 t. xanthan gum powder
1 t. dry mustard
1 t. ground coriander
1 pinch saffron threads or as you like
1 t. pink Himalayan salt plus to taste
1/4 t. ground allspice
fresh grind black pepper to taste
Combine ginger beer, banana and garlic cloves in blender container. Process till smooth as you can get it.
Add orange juice, carrot juice, apple cider vinegar. Blend till smooth.
Add guar gum and blend till dissolved (about 30 seconds).
Add xanthan gum and blend till dissolved (about 30 seconds).
Add remaining ingredients; blend till smooth then let set for about 1/2 -1 hour in the container while you do something else.
Come back and reblend the dressing, salt to taste, then pack into covered jars and refrigerate till ready to use.
Notes: It makes a lot, but it holds up well when refrigerated, so I ended up using it all.
