FANTA ORANGE SODA SALAD DRESSING fat free
with sun-dried tomato, garlic and fresh orange – fat-free. A refreshing change in the way you dress your salads!
Makes 6 cups
12 oz. can Fanta Orange Soda (you can use diet if you want)
2 c. red wine vinegar
2-1/2 c. water
1/4 c. Chick Pea Miso paste (I used Master Miso brand)
1/3 c. light brown sugar
1 c. dried tomato halves, firmly packed or .275 lbs.
2-4 lg. peeled garlic cloves
grated zest and juice of 2 fresh oranges – strain the juice
1 t. pink salt or more to taste
black pepper to taste
1/2 t. xanthan gum
1/2 t. guar gum
Combine all ingredients, except gums, in blender container. Pulse till dried tomatoes become bits, then go high speed. Turn off.
Sprinkle both gums onto dressing, then submerge them with a spoon into the top layer. Don’t go deep. Continue to process till thick and creamy, about 30 seconds.
Turn blender off and let set for 30 minutes or so. Reblend, then pack into covered containers and refrigerate.
Serve over salad of greens.
Notes: The pulpy texture of this dressing acts like orange pulp but better. No one would know it contained dried tomatoes – not my intent, but I like it.
The miso provides the salt and a rich lift. Miso Master makes a soy-free miso out of chickpeas that I like.
The dressing measures more just after it’s been blended than after it sets for a while. It doesn’t matter; it makes a lot!
