Minute Maid Limeade Dressing fat-free


Minute Maid Limeade combined with pineapple explodes onto your greens like no other dressing. Use as dressing for any salad you like or over cooked veggies or as a dipper for fried tofu!

Makes approx. 5 cups

20 oz. can pineapple slices or chunks in 100% pineapple juice

12 oz. froz. Minute Maid LIMEADE, thawed

1 c. white vinegar

1 c. peeled, diced red onion

2 t. pink Himalayan salt

2 t. guar gum powder

juice of 2-3 fresh limes about 1/4 c.

2 t. dry mustard

In blender container combine pineapple plus liquid from can, limeade, vinegar, onion and salt. Blend till as smooth as possible.

Sprinkle guar gum onto surface of dressing through small wire mesh strainer. Using small spoon submerge powder beneath top layer of dressing. Replace cap to blender container and blend till as smooth as possible.

Add fresh lemon and lime squeeze plus dry mustard. Blend again till smooth being sure to evenly incorporate all ingredients. Salt to taste.

Let set in container for about 30 minutes, then come back and re-blend, again till smooth. Transfer to tight-lidded jars and refrigerate till ready to use.
