Broccoli Curry Ramen Broth

BROCCOLI CURRY RAMEN BROTH 

Lots of broccoli processed with a store-bought IMAGINE brand Ramen Broth till fine-textured. Combined with water, pink Himalayan salt, a drizzle of extra virgin olive and mild sesame seed oil. Add some mellow miso, curry, coriander, mustard and garlic. Serve as is, or re-blend after it’s cooked for a creamier texture – whichever way you prefer. Maybe half and half? Tasty, satisfying and healthy too!

Makes 13-1/2 cups

 

2-1/2 lbs. froz. broccoli cuts, completely thawed

32 oz. carton IMAGINE brand RAMEN BROTH (or other broth you like)

6 c. water

3 T. mellow (white) miso paste

3 t. mild curry powder – add 1 t. at a time as you like it

1 T. dry mustard

1 T. pink Himalayan salt or to taste (start w/2 t.)

fresh grind black pepper to taste

1 T. light colored and flavored sesame oil

1 T. extra virgin olive oil

nutmeg (optional)

1 c. froz. peas


In 3 batches: add to blender container 1/3 thawed broccoli cuts and 1/3 Ramen Broth. Blend till smooth as you can get it.

Transfer to large soup pot.

Add remaining ingredients,except nutmeg and frozen peas. Stir well, bring to slow boil, reduce heat to low and cook 45 minutes, stirring as needed.

For added protein and contrasting texture I added frozen peas, which I happen to like. Cook till tender.


There are three ways you can serve this soup/broth: All three ways you begin by processing the broccoli with the RAMEN BROTH before you cook the soup.

After adding remaining ingredients and cooking the recommended time, serve as is. That’s #1.

Or, you can puree the soup after it’s done as well as processing the broccoli before you cook the soup. That’s #2.

The first gives a more textured feel and chew, and the second a creamier presentation. I do it both ways.

Or puree half the soup and add it to the half that is not pureed. That’s #3.

Ladle into soup cups/bowls. Sprinkle with nutmeg and additional fresh grind black pepper, if desired.


Notes: Use any type of broth that’s available, as long as it’s animal-free.

I prefer broccoli cooked well when  added to  soups. Do it the way you like it.
