STRAWBERRY WALNUT DRESSING
Fresh strawberries, dried apricots, walnuts, onion, fresh ginger and chia seeds. Crush, then smooth it all up in a blender to create a thick, yet light, fruity dressing for green or fruit salads! No added oil or sugar!
Makes approx. 1-3/4 cups
per 1/4 cup = Cal. 57, Fat 3.11g
6 lg. or 10 sm. fresh strawberries, hulled
1/4 c. raw walnut halves
6 unsulphured sun-dried dried apricots
1/4 c. apple cider vinegar
1/3 c. diced yellow onion
1/2 c. filtered water
1 T. peeled chopped fresh ginger
1 t. ground chia seeds
1 t. fine pink Himalayan salt
1/2 fresh lime squeeze
1/4 t. guar gum powder
In blender container place strawberries, walnuts and apricots. Blend till crumbly.
Add remaining ingredients UP TO AN INCLUDING lime, then blend till as smooth as you can get it ON HIGH SPEED.
Sprinkle no more than 1/4 teaspoon over top of dressing. Swirl powder under top surface of dressing with fork, then blend again till smooth.
Let set for about 30 minutes. Return and blend again, then pack in covered container and refrigerate till ready to use.
Notes: The little bit of guar gum just binds enough to keep the dressing from separating. Otherwise it’s a raw dressing.
The walnuts serve as the oil here.
