AFC SPICY SPAM AND EGG SALAD – for sandwiches
We use Tofu Pups for the spam and Gulden’s Spicy Brown Mustard in place of the traditional veggie mayo. Two types of tofu plus celery, scallion, green pepper with curry, fennel, garlic and cilantro! Nice!
Makes 5 cups
1/2 c. serving = 45.5 calories, 2.1 grams fat
12 oz. pkg. extra firm water packed tofu, rinsed and twisted in a tofu cloth to extract excess water – a sheer polyester piece of fabric works well
12.3 oz. pkg. extra firm Silken tofu, rinsed and twisted the same way to extract the liquid
2 t. sea salt
2 t. garlic powder
1 t. Madras curry powder, mild
1 t. ground fennel seed
1 t. turmeric
2 t. sugar
fresh grind black pepper to taste
1/4 rounded c. diced celery, 1/4 inch dice
1/4 rounded c. thinly sliced scallion, green and white part
1/3 c. diced green pepper, 1/4 inch squares
1 T. vegan yeast aka nutritional yeast
1/4 c. Gulden’s Spicy Brown Mustard
In large mixing bowl place the extra firm tofu first. Using a large fork mash lightly till evenly broken up.
Add the Silken tofu and do the same.
Add sea salt through black pepper, stirring to evenly distribute.
Now add celery, scallion, green pepper and distribute.
Next add the vegan yeast, stirring to disperse throughout.
Finally add the mustard, stirring to coat all ingredients.
Pack into covered containers and refrigerate till cold or ready to use.
Notes: The twist is important when making sandwich spreads with tofu. Get yourself a cloth, since paper towels are only good for the squeeze and not very good at that. You need to twist the tofu. Paper towels break and make a mess.
Gulden’s Spicy Brown Mustard works best because it’s thick. The yellow prepared mustard runs too thin and will thin this spread too much. The Gulden’s works better at replacing the veg mayo that’s high in calories.
The vegan yeast adds depth and helps to bind.
Tofu Pups: Just because the package contains 8 veggie hot dogs, doesn’t mean you have to use all of them in a recipe. Six out of eight isn’t bad.
The Silken tofu plus the water packed tofu contribute two different textures, which is what you want for the egg component of the salad. It also helps with the lack of veg mayo.
If you don’t want the bread, serve a scoop on a lettuce leaf.
Or just eat a teaspoon at a time throughout the day.
