VEG HAM AND EGG SALAD
Essentially fat-free salad or sandwich spread. Tastes like ham and egg. Also tastes great all by itself. If you want to add a little fat, then a couple tablespoons of veg mayo will work nicely. But we’re trimming the fat, so it really isn’t necessary to enjoy!
Makes 5-1/3 cups
2, 12.3 oz. pkg. extra from Silken type tofu, rinsed and squeezed and twisted in tofu cloth to remove excess liquid
1 t. salt
1 t. smoked paprika
2 t. garlic powder
1 t. ground coriander
1/2 t. turmeric
1/2 t. ground allspice
12 oz. pkg. vegan hot dogs – I used lightlife brand Smart Dogs, cut into chunks then processed in food processor till evenly crumbly – not too small not to large; you don’t want a paste
1/2 c. finely diced green pepper, hand-diced
1/4 c. finely diced sweet onion, also hand-diced
lg. handful of fresh cilantro leaves, coarsely cut – no stems
1/4 c. prepared yellow mustard
1 t. additional salt
fresh grind black pepper to taste
In large bowl combine all ingredients, stirring well after each addition. Transfer to covered container and refrigerate till cold. Overnight is best, but not necessary.
Use as a salad served on a lettuce leaf or as a sandwich spread.
