BARBECUE SWEET PEPPER RICE – FAT-FREE
Long grain white rice cooked with coriander, paprika, celery seed and smoke flavor. Tossed with sweet red peppers and Heinz Classic Barbecue Sauce. Simple, easy to make. Sweet, tangy and hot. If desired, mix with a steamed green vegetable! I used peas with great results!
Makes a little over 5 cups
2 c. water
2 t. sea salt
2 t. ground coriander
1 t. mild Hungarian paprika
1/4 t. celery seed
1 T. liquid smoke
1 T. apple cider vinegar
2 c. parboiled long grain white rice
1/2, 12 oz. jar sweet red roasted peppers, diced (1/2 inch squares) plus 2 T. liquid from jar
1/2 c. Heinz Classic Barbecue Sauce – fat-free
In large saucepan bring water, salt, coriander, paprika, celery seed, liquid smoke and vinegar to boil. Add rice, stir, return to boil.
Cover tightly, reduce heat to low and cook 15 minutes. Remove cover and fluff with fork.
Add peppers plus pepper juice and barbecue sauce. Stir to evenly coat. Serve.
Fresh basil makes a nice flavor garnish.
Notes: Heinz Classic Barbecue Sauce. It is thick and sweet, but also tangy-hot. Great sauce for adding to dishes, since it’s high potency spreads throughout the dish as mild, but distinct.
The liquid from the pepper jar teamed with the barbecue sauce creates a fatty essence.
I like to mix mine with steamed frozen petite peas.
