PEACHES PLUMS NECTARINES

What to do about corky fruit? Don’t dump it, stew it! Peaches, plums, nectarines stewed with coriander, ginger, brown sugar and sea salt!

Makes 3-1/2 cups

3 fresh peaches, sliced and pitted – leave skins on

3 fresh plums, sliced and pitted – leave skins on

3 fresh nectarines, sliced and pitted – leave skins on

1/2 c. light brown sugar

2 t. ground coriander

1/2 t. powdered ginger

1/4 t. sea salt


Place all ingredients in large saucepan, over medium-low heat; stir till sugar melts.

Cover and cook about 10 minutes, stirring as needed. Cook as long as you want till your desired softness is obtained.

Cool to room temperature, then pack in covered jars and refrigerate till ready to use.


Notes: The coriander and ginger make your taste buds sparkle!

There’s no need to add water or thickener. It takes care of itself in both instances.

Serve on toast, as a side dish condiment, as a snack or dessert.
